Product Description

The Kiritsuke is a multipurpose chef's knife. The tip is shaped like a samurai sword. The length of this knife allows it to cut sashimi and the flat edge can cut vegetables like an usuba.

The Honyaki knife is a single piece construction of hard carbon steel, hand forged in the same method of creating the Samurai sword. With conscientious care, Honyaki knives will keep their super sharp edges.High-carbon steel of Honyaki material is so hard that is difficult to forge. Each blade is carefully heat-treated and water tempered by skilled knife master. Because of the hardness, sharpening is very challenging but it maintains it's sharpness for a long time. We recommend these knives to experienced and high skilled chefs. Whetstone is recommended for sharpening. *Not Stain-resistant
