Suisin Momiji Funayuki 7.6" Right (19.5cm) - Find out more reviews of Suisin Momiji Funayuki 7.6" Right (19.5cm).

Product Description

The Suisin Momiji Funayuki are forged by Togashi Kenji, one of the few certified traditional knife craftsmen in Japan. They are hand finished with a wooden wheel and the blade is made with Shiro-ko steel. The Funayuki is a multi-purpose Japanese traditional knife. The name "Funayuki" or "Going on a boat" in Japanese comes from a tradition of fishermen, who kept a knife on their boats to clean fish to prepare their meals on their boats. The profile is similar to a Deba, however, the blade is much thinner than a Deba, making this a much more versatile, multi-purpose knife. Product Description

Master Artisan in Traditional Blacksmithing Arts, Mr. Keijiro Doi entered the world of Sakai City's traditional hand-forged knife crafting at the age of nineteen as an apprentice to his father, Kazuo Doi. Determined to master his chosen art, the younger Doi applied discipline and hard work to achieve the highest level of craftsmanship, perfecting his skill in the most challenging area of low temperature forging and producing the singularly sharp blades indispensable to professional chefs. In particular, Doi has received great praise from top caliber chefs throughout Japan for his masterful use of ao-niko or No.2 Blue Steel, an especially high performance material that is extremely difficult to forge. Doi lives and works by his motto, "A good craftsman never stops learning about his art," and has been improving his technique daily for 60 years. Keijiro Doi is proud to announce the apprenticeship of his son Itsuo, who hopes to carry on the tradition of Japanese hand forging. Suisin Ao-ko Suminagashi Kensaki Yanagi 11.7" (30cm) - Right - Find out more reviews of Suisin Ao-ko Suminagashi Kensaki Yanagi 11.7" (30cm) - Right.

Product Description

The flowing pattern in hand-forged layered steel can be mesmerizing but the advantages of suminagashi (sometimes called Damascus Steel) extend well beyond its beauty. To create these exquisite sashimi knives, craftsmen join carbon steel with soft iron in the kasumi method, then pound and fold the steel eight times on each side. This is a lengthy process, taking as long as needed to make eight kasumi knives, but the end result is a stunning 16-layer blade with the strength and flexibility of a honyaki knife. Style: Kensaki Yanagi, Steel Type: Ao-ko Suminagashi, Saya Cover: Wooden Saya Cover, Blade: Single-Edged, Handle Material: Ebony Handle, Bolster Material: Water Buffalo Horn with Silver Ring, Hardness Rockwell C scale: 62.
