Our Gyousen knives are especially made for the professional chef. Made by our veteran knife craftsman Fujii, who has over 50 years of experience in knife making. His knives are super sharp and durable.
Virgin High Carbon Steel knives are made of carbon steel with very few impurities. This results in knives with HRC 61, sharp edge and great edge retention. Handles are made of pakkawood with high carbon steel bolster. Tsubaki oil is recommended to maintain this knife. Not Stain Resistant*
The gyuto is a chef knife used for cutting meat, fish and vegetables.
