Product Description

This knife is made of high-carbon and stain resistant steel with added molybdenum. Impure substances are largely removed in the forging process. Molybdenum gives the knife greater rust-resistance, hardness, and sharpeness. This knife's sharpeness will last longer than typical stainless steel knife. About Tsubaya Brand: Tsubaya is located at Nishi-Asakusa, Taito-ku, Tokyo. The area is called KAPPABASHI where you can find any kind of kitchenware, dinnerware, and knives. Tsubaya has been featured in New York Times. In the article, Jared Lubarsky says "About 90 percent of their wares are sold to professional chefs - knives meant to last a lifetime, hand-forged and tempered blue steel, set in handles banded with deer horn to keep the wood from splitting or wearing; knives that take and keep a sharp edge... Professionals are picky about the tools they use all day...", and Tsubaya has fulfilled those customers' demands in every way. Tsubaya has been in business in Kappa-bashi for 65 years. They were once ironmongery, but the second-generation proprietor - Hiroshi Saito, changed their direction to become a knife specialized store in 1980. He proudly says, "Passing traditional knives down the generations is really important, but demands on knives vary from one chef to another, so we listen. That's why many of our knives in stores are our originals. Recently, I designed and customized Honesuki for French chef." His open-minded observation makes Tsubaya knives so popular and attractive to overseas customers.
