The Wusthof Ikon Blackwood 7" Santoku Knife has "dimples" ground into the face of the blade, which create an exceptionally fine edge and reduce drag by creating an air pocket where the knife meets the food. You'll notice that foods such as potatoes and onions will not stick to the blade. In addition, the cleaver-style shape and weight of the blade makes it an excellent choice for chopping meats, while the fine edge construction is perfect for smaller chopping tasks.. . . . .
